Ingredients

  • Filling:
  • 1 T Veg oil
  • 4 garlic cloves finely minced
  • 1 t sugar
  • 1/2# ground pork
  • 1 t fish sauce
  • salt & pepper
  • 1 T toasted long grain rice
  • Dipping Suace
  • 2 T fresh lime juice
  • 2 T fish sauce
  • 1 T sugar
  • 2 thinly sliced Thai Chiles
  • 1 T water
  • Serve:
  • 1 thinly sliced Thai Chile
  • 1/4 thinly sliced red onon
  • 1/4 c each torn thai basil, genoa basil, mint
  • Boston lettuce leaves

Method

  • Filling:
  • in a skillet, heat veg oil. add garlic; cook over moderately low heat, stirring a few times until golden brown (+/- 1 minute).
  • Add sugar, cook for 20 seconds
  • Add pork and cook over moderately high heat until no pink.
  • Add fish sauce, season w salt & pepper
  • Toast Rice:
  • med skillet over moderate heat, shake pan until browned +/- 3 min, cool, grind to a powder
  • Dipping Sauce:
  • combine all ingredients, stir until sugar dissolves
  • Serve:
  • off heat, add "Serve" ingredients to filling, sprinkle with ground rice
  • spoon filling into lettuce leaves, add desired dipping sauce and eat like a taco
