Ingredients

  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 1 small sprig thyme
  • salt and pepper to taste
  • 1 c. grated Parmesan cheese or Cheddar cheese
  • 1/2 small onion, peeled and minced
  • 2 1/2 c. hot milk
  • 1/2 small bay leaf
  • nutmeg

Method

  • Melt butter in heavy saucepan or skillet.
  • Add onion; cook over low heat, stirring, until onion is soft but not browned. Blend in flour; cook, stirring constantly, over low heat for 3 minutes, or until flour is thoroughly cooked.
  • Add one-third of the hot milk; stir vigorously while cooking sauce over medium heat until thickened and it begins to bubble.
  • Add remaining milk, thyme, bay leaf, salt, pepper and nutmeg to taste.
  • Cook, stirring, until thickened and smooth.
  • Stir in grated cheese; heat until cheese has melted.
  • Strain through a fine sieve.
  • Makes about 2 2/3 cups.
