Ingredients

  • 250 ml (9 fl oz/1 cup) pouring cream
  • 100 ml (3½ fl oz) milk
  • 1 teaspoon natural vanilla extract
  • 3 eggs
  • 80 g (2¾ oz/⅓ cup) caster (superfine) sugar
  • 80 g (2¾ oz/¾ cup) ground almonds
  • 340 g (12 oz) pitted prunes
  • icing (confectioners') sugar, for dusting
  • custard or crème anglaise, to serve
  • whipped cream, to serve (optional)

Method

1. Preheat the oven to 180°C (350°F/Gas 4). Lightly grease a shallow 750 ml (26 fl oz/3 cup) capacity ovenproof dish.

2. Combine the cream, milk and vanilla in a saucepan. Bring to a simmer over low heat, then remove from the heat and cool slightly.

3. Whisk together the eggs, sugar and ground almonds in a bowl. Add the cream mixture and stir to combine well. Scatter the prunes over the prepared dish. Pour the batter over the prunes and bake for 35–40 minutes, or until golden. Dust with icing sugar, pour over the custard and serve with whipped cream, if desired.
