- 2 14 cups flour
- 12 teaspoon salt
- 12 teaspoon baking powder
- 12 teaspoon ground cloves
- 1 teaspoon cinnamon
- 12 teaspoon nutmeg
- 14 teaspoon ginger
- 34 cup shortening or 34 cup margarine
- 1 cup brown sugar
- 1 egg
- 34 cup pumpkin puree
- 1 teaspoon vanilla
Method
- Combine dry ingredients.
- In a large bowl cream shortening and brown sugar.
- Add egg.
- Mix.
- Add pumpkin and vanilla mixing well.
- Add dry ingredients and mix.
- Drop by medium cookie scoop onto lightly greased cookie sheet.
- Bake 300 for 20 minutes.
- (I don't cook quite that long as we do like ours a little on the under baked side.

- These are a cake like cookie that do not spread out much, but if you are careful not to over bake they are very moist and yummy.
- Can frost w/ cream cheese frosting if you wish.
- Depending on the size of your scoop we got 3 dozen.
