Ingredients

  • 2 14 cups flour
  • 12 teaspoon salt
  • 12 teaspoon baking powder
  • 12 teaspoon ground cloves
  • 1 teaspoon cinnamon
  • 12 teaspoon nutmeg
  • 14 teaspoon ginger
  • 34 cup shortening or 34 cup margarine
  • 1 cup brown sugar
  • 1 egg
  • 34 cup pumpkin puree
  • 1 teaspoon vanilla

Method

  • Combine dry ingredients.
  • In a large bowl cream shortening and brown sugar.
  • Add egg.
  • Mix.
  • Add pumpkin and vanilla mixing well.
  • Add dry ingredients and mix.
  • Drop by medium cookie scoop onto lightly greased cookie sheet.
  • Bake 300 for 20 minutes.
  • (I don't cook quite that long as we do like ours a little on the under baked side.

  • These are a cake like cookie that do not spread out much, but if you are careful not to over bake they are very moist and yummy.
  • Can frost w/ cream cheese frosting if you wish.
  • Depending on the size of your scoop we got 3 dozen.
