Ingredients

  • 8 slices (Thin Slices) Bell Peppers, Any Color
  • 1 Tablespoon Olive Oil
  • 1 can (16 Oz. Size) Vegetarian Refried Beans
  • 1/2 cups Salsa
  • 1/4 cups Salsa Verde
  • 1 teaspoon Chili Powder
  • 1 teaspoon Crushed Red Pepper
  • 1- 1/2 cup Sredded Cheese Of Your Choice (I Used Colby Jack)
  • 4 whole Burrito Wraps
  • Sour Cream And Taco Sauce, To Serve

Method

  • Saute the pepper slices in the olive oil until tender.
  • Dice peppers.
  • In a bowl, mix the diced peppers, refried beans, salsa, salsa verde, chili powder, and crush red pepper.
  • Warm burrito wraps in the microwave for 15 seconds, to make them flexible.
  • Add 1/4 cup of the bean mixture to the wrap and spread in the center.
  • Sprinkle with a few tablespoons of cheese, then roll up like a burrito.
  • Heat in the microwave for 30 seconds, then turn over and heat for another 30 seconds.
  • Serve garnished with sour cream and taco sauce.
