Ingredients
- 3 medium-size raw potatoes, washed, pared and grated
- 2 eggs, separated
- 1 1/2 Tbsp. flour
- 1/2 tsp. baking powder
- 1 tsp. salt
Method
- Beat egg yolks; stir in grated potatoes and a mixture of the flour, baking powder and salt; mix well.
- Beat the egg whites until rounded peaks are formed.
- Fold into the potato mixture. Spoon about 2 tablespoons of batter for each pancake into hot fat in skillet.
- Brown on both sides.
- Serve with applesauce or molasses, if you like.
