Ingredients

  • 3 medium-size raw potatoes, washed, pared and grated
  • 2 eggs, separated
  • 1 1/2 Tbsp. flour
  • 1/2 tsp. baking powder
  • 1 tsp. salt

Method

  • Beat egg yolks; stir in grated potatoes and a mixture of the flour, baking powder and salt; mix well.
  • Beat the egg whites until rounded peaks are formed.
  • Fold into the potato mixture. Spoon about 2 tablespoons of batter for each pancake into hot fat in skillet.
  • Brown on both sides.
  • Serve with applesauce or molasses, if you like.
