Ingredients

  • 2 lb. small red potatoes (skin on)
  • 2 Tbsp. olive oil or salad oil
  • 1 tsp. salt
  • 1/2 tsp. coarsely ground black pepper
  • 1/2 tsp. dried rosemary leaves, ground or crushed
  • garlic powder

Method

  • Preheat oven to 450° for about 30 minutes before serving. Wash potatoes thoroughly; cut each potato in quarters.
  • Place in large roasting pan with oil and remaining ingredients.
  • Sprinkle garlic powder to taste.
  • Toss to coat well.
  • Roast potatoes 20 minutes or until fork-tender and golden brown, stirring potatoes halfway through cooking.
  • Makes 4 servings.
