Ingredients

  • 2 lbs fresh beets, washed and trimmed
  • 12 lb shallot, peeled
  • 1 tablespoon vinegar
  • 1 tablespoon olive oil
  • 12 teaspoon salt
  • 12 teaspoon pepper

Method

  • Preheat oven to 400F Place beets and shallots on a large sheet of aluminum foil and fold the edges together to seal.
  • Bake for 1 hour or until beets are tender.
  • Remove from oven and cool.
  • Combine remaining ingredients and set aside,.
  • Remove skins from beets, cut into chunks, and drizzle with vinegar mixture.
  • Toss well and serve.
