Ingredients

  • 100 to 150 grams Sweet potato
  • 4 tbsp Sugar
  • 2 tbsp Water
  • 1 bit less than 1/2 teaspoon Salt

Method

  • Julienne the sweet potato and fry in 160C oil slowly until crispy.
  • Once golden browned and crispy, remove and drain.
  • Add sugar, salt, and water to a pot and heat on low-medium heat.
  • Simmer until it becomes creamy.
  • Caution: be careful not to let the sugar caramelize.
  • Add the fried sweet potato to the pot and once you've mixed with the sauce, it's complete.
  • It's delicious freshly fried!
  • It's also delicious cooled and crunchy!
