Ingredients
- 100 to 150 grams Sweet potato
- 4 tbsp Sugar
- 2 tbsp Water
- 1 bit less than 1/2 teaspoon Salt
Method
- Julienne the sweet potato and fry in 160C oil slowly until crispy.
- Once golden browned and crispy, remove and drain.
- Add sugar, salt, and water to a pot and heat on low-medium heat.
- Simmer until it becomes creamy.
- Caution: be careful not to let the sugar caramelize.
- Add the fried sweet potato to the pot and once you've mixed with the sauce, it's complete.
- It's delicious freshly fried!
- It's also delicious cooled and crunchy!
