Ingredients

  • 1 lb. sirloin
  • 1/2 lb. center cut pork chops
  • 1 lb. chicken breasts
  • 2 green peppers
  • 4 hot peppers
  • 2 cloves garlic
  • 4 tsp. chili powder
  • 1 tsp. fresh oregano
  • 1 medium onion
  • olive oil
  • 1 gal. tomato juice
  • 2 pkg. El Paso chili mix
  • 1 can kidney beans
  • 1 bottle Sam Adams wheat beer
  • 2 cans tomato paste
  • 1 tsp. basil
  • 1 bay leaf

Method

  • Using meat grinder on coarse, grind meats, peppers, garlic and onion.
  • Add olive oil to the bottom of 5-quart Dutch oven.
  • Brown meats; pour off excess fat.
  • Add rest of ingredients.
  • Bring to a boil.
  • Stir occasionally, then cover.
  • Reduce heat and simmer 1 hour.
  • Let cool to room temperature, then reheat.
