Ingredients

  • 2 tablespoons oil (can use Peanut oil)
  • 1 large onion, diced
  • 1 -2 garlic clove, minced
  • 12 cup cilantro, chopped
  • 14 teaspoon cayenne
  • 2 tablespoons curry powder
  • 3 cups stock
  • 1 (28 ounce) can diced tomatoes
  • 23 cup peanut butter, unsweetened
  • 0.5 (14 ounce) can coconut milk
  • 1 pinch salt

Method

  • Heat oil and add onions, garlic cilantro cook until onions are softened.
  • Stir in Cayenne and Curry powder to heat the spices.
  • Add water (stock) and the full can of tomatoes with juices.
  • Bring to boil.
  • Add peanut butter and lower heat allow the peanut butter to dissolve.
  • (I use my immersion blender to puree at this point to make a smooth soup).
  • Add coconut milk and salt to taste ,simmer.
  • Ladle into bowels and garnish as desired.
