Ingredients
- 2 tablespoons oil (can use Peanut oil)
- 1 large onion, diced
- 1 -2 garlic clove, minced
- 12 cup cilantro, chopped
- 14 teaspoon cayenne
- 2 tablespoons curry powder
- 3 cups stock
- 1 (28 ounce) can diced tomatoes
- 23 cup peanut butter, unsweetened
- 0.5 (14 ounce) can coconut milk
- 1 pinch salt
Method
- Heat oil and add onions, garlic cilantro cook until onions are softened.
- Stir in Cayenne and Curry powder to heat the spices.
- Add water (stock) and the full can of tomatoes with juices.
- Bring to boil.
- Add peanut butter and lower heat allow the peanut butter to dissolve.
- (I use my immersion blender to puree at this point to make a smooth soup).
- Add coconut milk and salt to taste ,simmer.
- Ladle into bowels and garnish as desired.
