Ingredients

  • 2 large cans LeSueur peas
  • 2 cans Shoepeg white corn
  • 1 big bell pepper, finely chopped
  • 1 big onion, finely chopped
  • 1 c. celery, finely chopped
  • 2 cans French-cut green beans
  • 1 (4 oz.) jar diced pimentos
  • 1 tsp. black pepper
  • 1 Tbsp. water
  • 3/4 c. vinegar
  • 1/3 c. oil
  • 1 1/2 c. sugar

Method

  • Drain all cans of vegetables.
  • Combine rest of vegetables in large bowl.
  • Bring rest of ingredients to a boil or until sugar dissolves.
  • Cool and pour over vegetables.
  • Store in refrigerator for months.
  • Makes about 3/4 gallon.
