- 2 large cans LeSueur peas
- 2 cans Shoepeg white corn
- 1 big bell pepper, finely chopped
- 1 big onion, finely chopped
- 1 c. celery, finely chopped
- 2 cans French-cut green beans
- 1 (4 oz.) jar diced pimentos
- 1 tsp. black pepper
- 1 Tbsp. water
- 3/4 c. vinegar
- 1/3 c. oil
- 1 1/2 c. sugar
Method
- Drain all cans of vegetables.
- Combine rest of vegetables in large bowl.
- Bring rest of ingredients to a boil or until sugar dissolves.
- Cool and pour over vegetables.
- Store in refrigerator for months.
- Makes about 3/4 gallon.
