Ingredients

  • 6 ounces cooked boneless, skinless chicken breast
  • 1 red bell pepper (seeded and thinly sliced)
  • 1 cup shredded carrots
  • 1 cup shredded red cabbage
  • 2 tablespoons chopped almonds
  • 1/2 cup canned mandarin oranges, drained
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon rice vinegar

Method

  • Shred chicken into a bowl. Add bell pepper, carrots, cabbage, almonds and mandarin oranges. Drizzle with sesame oil, soy sauce and rice vinegar. Toss to coat.
