Ingredients

  • 1 Tbsp. sugar
  • 1 tsp. flour
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 2 c. sliced okra
  • Boiling water
  • 2 Tbsp. vegetable oil
  • 1 medium onion, chopped
  • 1 medium green pepper, chopped
  • 3 tomatoes, peeled and chopped

Method

  • Combine the first four ingredients. Set aside. Cook okra in boiling water 10 minutes or until tender. Drain.
  • Heat oil over medium heat and saute onion and pepper until tender. Stir in sugar mixture. Add okra and simmer until heated through stirring as little as possible. Serve with rice if desired.
