Ingredients

  • 350g spaghetti
  • 1 tbsp extra virgin olive oil
  • 200g spicy pancetta (chopped)
  • 4 egg yolks
  • 2 egg whites
  • 50g parmesan (grated)
  • salt and pepper
  • Parmesan (shaved)

Method

Cook spaghetti in plenty of lightly salted boiling water, stirring occasionally, until al dente. Drain, reserving 3-4 tbsp cooking water.

Meanwhile, heat extra virgin olive oil in a frying pan over medium heat. Add spicy pancetta and cook until crisp.

Whisk egg yolks and egg whites in a large bowl and add parmesan, salt and pepper. Add pasta to egg mixture with pancetta and mix quickly to combine, adding a little of the cooking water if pasta is too dry.

Serve immediately with parmesan.
