Ingredients
- 1 (10 oz.) pkg. frozen, chopped spinach, thawed and drained
- 2/3 c. Ricotta cheese
- 1/8 tsp. nutmeg
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 2 medium tomatoes, peeled and sliced
- 1 1/2 oz. grated Mozzarella cheese
- 1/2 oz. grated Parmesan cheese
Method
- Combine spinach, Ricotta, salt, pepper and nutmeg; mix well. Spoon 1/3 into baking dish.
- Cover with 1/3 of the tomatoes and 1/3 of the Mozzarella; repeat twice.
- Sprinkle with Parmesan. Bake at 350° for 20 minutes or until cheese is bubbly.
- Serve as is or put under broiler, about 4 inches from
- heat source for 2 minutes or until top is golden brown.
- Makes 2 luncheon servings.
