Ingredients

  • 1 (10 oz.) pkg. frozen, chopped spinach, thawed and drained
  • 2/3 c. Ricotta cheese
  • 1/8 tsp. nutmeg
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 2 medium tomatoes, peeled and sliced
  • 1 1/2 oz. grated Mozzarella cheese
  • 1/2 oz. grated Parmesan cheese

Method

  • Combine spinach, Ricotta, salt, pepper and nutmeg; mix well. Spoon 1/3 into baking dish.
  • Cover with 1/3 of the tomatoes and 1/3 of the Mozzarella; repeat twice.
  • Sprinkle with Parmesan. Bake at 350° for 20 minutes or until cheese is bubbly.
  • Serve as is or put under broiler, about 4 inches from
  • heat source for 2 minutes or until top is golden brown.
  • Makes 2 luncheon servings.
