  • 300 grams Strawberries
  • 1 tsp Lemon juice
  • 250 ml Water
  • 2 grams Kanten powder
  • 40 grams Sugar
  • 1 tbsp Honey


  • Wash and hull the strawberries.
  • Place in a food processor and pulse with lemon juice into a puree.
  • Combine the water, sugar, and kanten and heat.
  • Bring to a boil while stirring constantly.
  • Once it reaches a boil, reduce to low and simmer for about 2 minutes until the kanten dissolves.
  • Turn off the heat and add the honey.
  • Once the honey is dissolved, add the strawberry puree.
  • Try not to create bubbles when stirring.
  • Skim off any scum on the surface and pour into serving dishes.
  • Chill until set.
