Ingredients
- 300 grams Strawberries
- 1 tsp Lemon juice
- 250 ml Water
- 2 grams Kanten powder
- 40 grams Sugar
- 1 tbsp Honey
Method
- Wash and hull the strawberries.
- Place in a food processor and pulse with lemon juice into a puree.
- Combine the water, sugar, and kanten and heat.
- Bring to a boil while stirring constantly.
- Once it reaches a boil, reduce to low and simmer for about 2 minutes until the kanten dissolves.
- Turn off the heat and add the honey.
- Once the honey is dissolved, add the strawberry puree.
- Try not to create bubbles when stirring.
- Skim off any scum on the surface and pour into serving dishes.
- Chill until set.
