- 3 lbs.sweet italian sausage with fennel seeds
- 1/4 cup fresh basil
- 1/4 cup fresh oregano
- 3 cups ricotta cheese
- 2 eggs
- 6 cups mozzarella cheese
- 2 teaspoons sea salt
- 2 teaspoons fresh cracked pepper
- 1 1/2 cups red wine
- 1 1/4 cups sun dried tomatoes with oil and herbs
- 6 cups crushed tomatoes
- 1/4 cup olive oil
- 1 sweet onion
- 2 bay leaves
- 1 garlic clove
- 1 tablespoon sugar
- 1 lb pasta noodles
- 4 cups fresh spinach
- 3 cups fresh grated parmesan-romano cheese mix
Method
- brown italian sausage,onion,and garlic in olive oil.
- add: red wine and simmer for 10 minute.
- in large pot.
- add;.
- crushed tomotoes,fresh basil,fresh oregano,bay leaves,sea salt,fresh cracked pepper,italian sausage,and olive oil.
- mix: ricotta cheese, 2 eggs, roasted garlic,sea salt, fresh cracked pepper and fresh grated parmasean cheese.
- in a deep dish pan:
- add sauce: then noodles,cheese,sun dried tomatoes and fresh spinach.
- then repeat layering two more times.
- top with mozzrella and fresh grated parmesean romano cheese.
- BAKE IN OVEN@350 FOR 45 minute.
