Ingredients
- 3 cups yams cooked
- 3 tablespoons butter melted
- 1/2 teaspoon salt
- 1/4 cup orange juice
- 9 ounces crushed pineapple drained
- mini marshmallows
Method
- Mash yams.
- Add butter, salt, and orange juice.
- Beat until light and fluffy with mixer.
- Add pineapple.
- Place in 1 1/2 quart casserole and dot top with butter.
- Bake 15 minutes at 350 degrees.
- Then top with marshmallows and bake until brown, about 15 minutes more.
- Serves 6.
