Ingredients

  • 1 lb. ground beef
  • 1/2 c. chopped onion
  • 1/2 c. chopped green bell pepper
  • 1 pkg. taco seasoning mix
  • 1 (16 oz.) can refried beans
  • 1 (16 oz.) can tomatoes, drained and cut up
  • 6 c. torn lettuce
  • 2 large tomatoes, coarsely chopped
  • 1 large avocado, peeled and chopped
  • 1 c. Cheddar cheese, shredded

Method

  • In large skillet, brown ground beef, onion and green pepper over medium heat; drain.
  • Stir in taco seasoning, refried beans and canned tomatoes; simmer for 15 minutes.
  • In large bowl, combine lettuce, tomatoes and avocado; toss.
  • Place lettuce mixture on individual serving plates.
  • Top with meat mixture; sprinkle with cheese.
  • Garnish with a dollop of sour cream and a tablespoon of sliced green onions, if desired.
  • Serve with corn chips.
