Ingredients

  • a round of fresh goat cheese
  • bread (preferably walnut bread if available, otherwise just regular toast will do)
  • mixed greens (mesclun, mache, romaine)
  • 1 ripe pear
  • 1 tsp olive oil
  • walnuts
  • honey
  • balsamic vinaigrette

Method

  • Cut pear into thin slices and add to top of mixed greens. In a small frying pan, add the olive oil and then the walnuts and sautee the walnuts until browned on both sides and crispy. Add the walnuts to the salad. Spread honey onto the bread, then add round slices of the goat cheese and put under a grill or oven broiler for about 1-2 minutes until the cheese is a bit melted and the bread browned at the edges. Add the goat cheese honey toasts to the salad and serve warm. Pour honey lightly over the salad and sprinkle olive oil and some balsamic vinaigrette. Bon appetit!
