Ingredients

  • 4 corn tortillas (6 inch)
  • 1/2 cup instant white rice, uncooked
  • 1 can (15 oz.) black beans, rinsed
  • 1 tsp. ground cumin
  • 1/4 tsp. each garlic powder and ground red pepper (cayenne)
  • 1 cup KRAFT Authentic Mexican Style Finely Shredded Cheeses, divided
  • 1 tomato, seeded, chopped King Sooper's 1 lb For $0.99 thru 02/09
  • 1/4 cup chopped cilantro

Method

  • Heat oven to 350F.
  • Spray both sides of tortillas with cooking spray; place in single layer on baking sheet.
  • Bake 6 to 7 min.
  • or until crisp and lightly browned.
  • Meanwhile, cook rice in medium saucepan as directed on package.
  • Add beans and seasonings to rice; mix lightly.
  • Spoon onto tortillas.
  • Reserve 2 Tbsp.
  • cheese; sprinkle remaining cheese over tostadas.
  • Bake 5 min.
  • or until cheese is melted; top with tomatoes, cilantro and reserved cheese.
