Ingredients

  • 2 lb. ground turkey
  • 2 c. lightly packed bread crumbs
  • 1 good size onion, finely chopped in processor or blender
  • 3 Tbsp. ketchup
  • 1 tsp. or less salt
  • black pepper to taste
  • 3 cloves fresh garlic, put through press or chopped
  • 1 tsp. Italian herbs
  • 1 (28 oz.) can tomato puree
  • 1 (28 oz.) can crushed tomatoes
  • 1 can tomato paste, plus 1 paste can water
  • 1/2 c. Egg Beaters
  • juice of 1/2 lemon
  • 7 or 8 cloves garlic

Method

  • Empty all canned tomatoes into large top of stove pot.
  • Add paste can of water and, as mixture is cooking, mix thoroughly. Let cook until it begins to bubble on top.
  • Put turkey into large bowl.
  • Add onion, salt, pepper, bread crumbs, mixed with ketchup, and 2 ice cubes with a little water to moisten.
  • Add Egg Beaters, garlic and 1/2 of the Italian herbs.
  • Mix thoroughly either with fork or hands.
  • Let stand for about 1/2 hour in order to have crumbs absorb moisture.
