Ingredients

  • 2 Tbsp. kosher gelatin (unflavored)
  • 1/2 c. water (cold)
  • 1 c. cashews (raw)
  • 1 c. boiling water
  • 10 oz. pkg. tofu
  • 3/4 c. honey
  • 2 Tbsp. vanilla
  • 1/2 tsp. salt
  • 1 1/2 c. ice with water

Method

  • Soak gelatin in 1/2 cup water in blender for 5 minutes. Whiz briefly.
  • Add
  • cup boiling water and blend to dissolve gelatin. Add
  • cashews and blend smooth.
  • Add remaining ingredients
  • and blend,
  • gradually
  • adding
  • ice
  • cubes with water. Blend
  • well. Freeze.
  • Remove from freezer 30 minutes prior to serving for easier scooping.
