Ingredients
- 2 Tbsp. kosher gelatin (unflavored)
- 1/2 c. water (cold)
- 1 c. cashews (raw)
- 1 c. boiling water
- 10 oz. pkg. tofu
- 3/4 c. honey
- 2 Tbsp. vanilla
- 1/2 tsp. salt
- 1 1/2 c. ice with water
Method
- Soak gelatin in 1/2 cup water in blender for 5 minutes. Whiz briefly.
- Add
- cup boiling water and blend to dissolve gelatin. Add
- cashews and blend smooth.
- Add remaining ingredients
- and blend,
- gradually
- adding
- ice
- cubes with water. Blend
- well. Freeze.
- Remove from freezer 30 minutes prior to serving for easier scooping.
