Ingredients
- 2 Tbsp. butter
- 1 1/2 c. fresh vegetables (celery, carrots, broccoli, green peppers and peas)
- 1 1/2 c. chicken broth
- 1 1/2 c. uncooked Minute rice
- 2 Tbsp. grated Parmesan cheese
- 1 onion
Method
- Saute vegetables and onions in butter until tender. Add chicken broth; bring to a boil.
- Stir in rice and remove from heat.
- Let stand for 5 minutes or until broth is absorbed. Sprinkle with cheese before serving.
