Ingredients

  • 1 1/2 c. flour
  • 1/4 c. sugar
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1/3 c. vegetable oil
  • 1 egg, beaten
  • 1/2 c. milk
  • 1/2 c. maple syrup
  • 3/4 c. quick oats
  • 1 c. blueberries

Method

  • Preheat oven 350°; grease muffin tin and set aside. Mix together flour, sugar, baking powder, salt.
  • Mix together oil, beaten egg, milk, syrup and oats.
  • Stir into dry mixture until moistened; do not overmix.
  • Fold in floured blueberries; fill greased muffin tin 2/3 full and sprinkle tops with a little granulated sugar.
  • Bake at 350° for 25 - 30 minutes.
  • Makes 12 muffins.
