Ingredients
- 1 1/2 c. flour
- 1/4 c. sugar
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1/3 c. vegetable oil
- 1 egg, beaten
- 1/2 c. milk
- 1/2 c. maple syrup
- 3/4 c. quick oats
- 1 c. blueberries
Method
- Preheat oven 350°; grease muffin tin and set aside. Mix together flour, sugar, baking powder, salt.
- Mix together oil, beaten egg, milk, syrup and oats.
- Stir into dry mixture until moistened; do not overmix.
- Fold in floured blueberries; fill greased muffin tin 2/3 full and sprinkle tops with a little granulated sugar.
- Bake at 350° for 25 - 30 minutes.
- Makes 12 muffins.
