- None None Za'atar Spice Blend
- 1 tbsp sumac
- 1 tbsp toasted sesame seeds
- 2 tsp finely chopped fresh thyme leaves
- 1 tbsp olive oil
- 1 tsp dried marjoram
- None None Fattoush
- 2 None pita breads
- 4 None tomatoes, cut into wedges
- 2 None mini cucumbers, seeded, sliced thinly
- 1 None green pepper, seeded, cut into 3/4 inch pieces
- 3 None spring onions, sliced thinly
- 1/3 cup coarsely chopped fresh flat-leaf parsley leaves
- 1/4 cup coarsely chopped fresh mint leaves
- 1/2 cup olive oil
- 1/4 cup lemon juice
- 2 cloves garlic, minced
- None None Za'atar Spiced Veal Chops
- 4 (7 oz) veal loin chops
Method
- Preheat broiler.
- To make the za'atar, combine sumac, sesame, thyme, olive oil and marjoram in a small bowl.
- To make the fattoush, broil pitas until crispy then break into small pieces. Combine tomatoes, cucumbers, pepper, onions and herbs in a large bowl. Just before serving, toss bread, oil, lemon juice and garlic into salad.
- Broil veal, turning once, until cooked to your liking. Sprinkle with 1 tbsp za'atar. Serve with fattoush.
