Ingredients

  • 3 large zucchini, cut (seeds out)
  • 2 large onions
  • 1 large green pepper
  • 1 large red pepper
  • 1/2 c. salt
  • 1 c. water
  • 2 1/2 c. vinegar
  • 3 c. sugar
  • 2 tsp. turmeric
  • 2 tsp. celery seed

Method

  • Put squash, onion and peppers through food grinder (coarse blade).
  • Add salt and enough water to cover; let stand for 1 hour. Then rinse good under cold water and drain well.
  • Boil sugar, vinegar, water and spices for 3 minutes; then add vegetables and cook after it boils another 15 minutes.
  • Stir often.
  • Pack in hot sterilized jars and seal.
  • To seal boil jar lids for 10 minutes and top jars with rings.
