- 12 lb chicken, but in cubes
- 4 12 teaspoons olive oil
- 3 tablespoons asian salad dressing
- 14 teaspoon garlic powder
- 18 teaspoon crushed red pepper flakes
- 2 medium carrots, shredded
- 1 (8 ounce) can water chestnuts, drained and diced
- 1 tablespoon minced fresh ginger
- 6 leaves lettuce
- 14 cup sliced almonds
Method
- Cook chicken in olive oil.
- Drain and set aside.
- In small bowl, whisk together salad dressing, garlic powder, crushed red pepper flakes and olive oil.
- Stir in carrots, water chestnuts, ginger and chicken.
- Spoon mixture onto lettuce leaves and sprinkle with almonds.
- Fold sides of lettuce over filling, roll up and serve.
