Ingredients

  • 12 lb chicken, but in cubes
  • 4 12 teaspoons olive oil
  • 3 tablespoons asian salad dressing
  • 14 teaspoon garlic powder
  • 18 teaspoon crushed red pepper flakes
  • 2 medium carrots, shredded
  • 1 (8 ounce) can water chestnuts, drained and diced
  • 1 tablespoon minced fresh ginger
  • 6 leaves lettuce
  • 14 cup sliced almonds

Method

  • Cook chicken in olive oil.
  • Drain and set aside.
  • In small bowl, whisk together salad dressing, garlic powder, crushed red pepper flakes and olive oil.
  • Stir in carrots, water chestnuts, ginger and chicken.
  • Spoon mixture onto lettuce leaves and sprinkle with almonds.
  • Fold sides of lettuce over filling, roll up and serve.
