Ingredients
- 1 (12 oz.) jar chunky salsa
- 1 c. sweet corn, thawed and drained
- 3/4 c. salad dressing or mayo
- 2 c. (8 oz.) shredded Colby or Monterey Jack cheese
- shredded lettuce and chopped tomatoes (optional)
- 1 lb. ground beef
- 1 Tbsp. chili powder
- 2 c. crushed tortilla chips
Method
- Divide chips and cheese, 1 cup to each portion.
- Heat oven to 350°.
- Brown meat; drain.
- Stir in salsa, corn, salad dressing and chili powder.
- Layer 1/2 meat mixture in 2-quart casserole with 1 portion of cheese-chip mixture.
- Repeat layers.
- Bake for 20 minutes, or until thoroughly heated.
- Top with lettuce and tomatoes, if desired.
