Ingredients

  • 1 (12 oz.) jar chunky salsa
  • 1 c. sweet corn, thawed and drained
  • 3/4 c. salad dressing or mayo
  • 2 c. (8 oz.) shredded Colby or Monterey Jack cheese
  • shredded lettuce and chopped tomatoes (optional)
  • 1 lb. ground beef
  • 1 Tbsp. chili powder
  • 2 c. crushed tortilla chips

Method

  • Divide chips and cheese, 1 cup to each portion.
  • Heat oven to 350°.
  • Brown meat; drain.
  • Stir in salsa, corn, salad dressing and chili powder.
  • Layer 1/2 meat mixture in 2-quart casserole with 1 portion of cheese-chip mixture.
  • Repeat layers.
  • Bake for 20 minutes, or until thoroughly heated.
  • Top with lettuce and tomatoes, if desired.
