- 250 g dessert apples, chopped
- 30 ml lemon juice
- 150 g soft margarine (olive or vegetable)
- 75 g dark brown sugar
- 75 g golden syrup
- 325 g oats
- 15 g oat bran
- 25 g ground flax seeds
- 40 g dried cranberries
- 20 g dried blueberries
- 20 g sesame seeds
- 30 g sunflower seeds
- 50 g brazil nuts (shaved)
Method
- Bring apples to boil, then simmer for 10 minutes until soft.
- Melt margarine, sugar & syrup in a large saucepan, then remove from heat.
- Add berries to hot mixture to allow time to plump up.
- Add all other ingredients.
- Mix well.
- Pat into 30cm x 20cm (12" x 8")pan.
- Bake @ 180c for 25 minutes.
- Allow to cool for 15mins before cutting and removing from pan onto cooling rack.
