- 1/2 cup black rice uncooked
- 1/4 head red cabbage sliced thinly
- 1 cup cherry tomatoes halved or not
- 1/2 avocado diced
- 1 cucumber small, diced
- 3 radishes large, thinly sliced
- 1 handful watercress leaves
- vinaigrette For Lemon
- 2 tablespoons extra-virgin olive oil
- 1 lemon
- 1/2 cup fresh dill chopped
- 1/2 teaspoon sea salt or to taste
- 1/2 teaspoon black pepper or to taste
Method
- Cook the black rice as you would cook any other rice. Add the condiment to taste. Cook the rice on low heat, with the lid on, until it dries. Note: Cook the black rice beforehand so that it can cool, off before make the salad.
- While the rice cook, make the vinaigrette. In a small bowl, whisk together all ingredients. Set aside.
- In a large bowl, combine handful watercress, cherry tomatoes. Add the cooked rice, red cabbage, cucumber, radishes and avocado.
- Drizzle with vinaigrette, toss and enjoy!
