Ingredients

  • 1/2 cup black rice uncooked
  • 1/4 head red cabbage sliced thinly
  • 1 cup cherry tomatoes halved or not
  • 1/2 avocado diced
  • 1 cucumber small, diced
  • 3 radishes large, thinly sliced
  • 1 handful watercress leaves
  • vinaigrette For Lemon
  • 2 tablespoons extra-virgin olive oil
  • 1 lemon
  • 1/2 cup fresh dill chopped
  • 1/2 teaspoon sea salt or to taste
  • 1/2 teaspoon black pepper or to taste

Method

  • Cook the black rice as you would cook any other rice. Add the condiment to taste. Cook the rice on low heat, with the lid on, until it dries. Note: Cook the black rice beforehand so that it can cool, off before make the salad.
  • While the rice cook, make the vinaigrette. In a small bowl, whisk together all ingredients. Set aside.
  • In a large bowl, combine handful watercress, cherry tomatoes. Add the cooked rice, red cabbage, cucumber, radishes and avocado.
  • Drizzle with vinaigrette, toss and enjoy!
