Ingredients

  • 1 teaspoon Olive Oil
  • 1/2 cups Corn
  • 4 cloves Garlic
  • 1 cup Bell Peppers
  • 1 cup Cooked Black Rice
  • 4 leaves Basil
  • 2 Tablespoons Pine Nuts, For Garnish
  • 1 Egg, Cooked As Desired, To Serve (optional)
  • FOR THE VINAIGRETTE:
  • 2 Tablespoons Balsamic Vinegar
  • 2 Tablespoons Orange Juice
  • 1 teaspoon Honey
  • 1/2 teaspoons Sriracha Or Hot Sauce
  • 4 Tablespoons Olive Oil
  • 1/4 teaspoons Salt And Pepper

Method

  • 1. In a saute pan, add olive oil. Add the corn, garlic and saute for 1 minute on low heat.
  • 2. Add the bell peppers, saute for a minute and add the cooked rice.
  • 3. Heat through, turn of the heat and add the basil.
  • 4. For the vinaigrette, add balsamic vinegar, orange juice, honey, hot sauce, olive oil, salt and pepper and mix it well.
  • 5. Add the vinaigrette little by little until the desired taste is achieved. You can add more salt, but you cannot take it away, so please note, add salt a little at a time.
  • 6. Top with pine nuts and egg if desired.
