Ingredients
- 1/4 lb. butter
- 3/4 c. diced celery
- 3/4 c. diced onions
- 1 tsp. paprika
- 2 c. chicken stock
- 1 c. long grain white rice, uncooked
- 1/2 c. mushrooms, canned
- 1/2 c. pimentos
- dash of yellow vegetable color
Method
- Saute until tender celery, onions, mushrooms and pimentos. Add paprika, vegetable color, chicken stock and rice.
- Bring to rolling boil, stirring often.
- Place in casserole, cover and place in oven at 400° for 20 minutes.
- Allow to sit after out of oven about 10 minutes.
