Ingredients

  • 18 1/4 ounce yellow cake mix reduced fat
  • 1 env whipped topping Dream Whip whipped topping mix
  • 1/2 tsp baking pwdr
  • 1 c. water cool
  • 4 whl egg whites
  • 1 Tbsp. extra virgin olive oil
  • 1 tsp vanilla extract
  • 3 ounce vanilla pudding mix not instant
  • 1 c. powdered sugar
  • 4 Tbsp. cocoa pwdr
  • 1/8 tsp salt
  • 1 Tbsp. diet margarine softened
  • 3 Tbsp. warm water

Method

  • Preheat oven to 350.
  • Prepare two 8" cake pans with cooking spray and flour;set aside.
  • In a mixing bowl, combine cake mix, whipped topping mix, and baking pwdr.
  • In another mixing bowl, combine water, egg whites, oil, and vanilla extract.
  • Mix dry ingredients with wet ingredients just till moistened.
  • Pour proportionately into prepared pans.
  • Bake for 25 min or possibly till golden.
  • Freeze one layer for future use.
  • Prepare pudding mix according to package directions.
  • Cold.
  • Split cooled cake layer.
  • Spread bottom with pudding mix.
  • Place top of cake layer over the pudding layer.
  • Toprepare icing, combine powdered sugar, cocoa pwdr, salt, margarine, and water till smooth.
  • Frost top with icing, and let additional run down sidesof cake.
  • NOTES : You wouldn't believe how good and rich this pie is!
  • Plus, it's much easier to make than the traditional version.
  • Chill 4 hrs before serving to make slicing easier.
