- 18 1/4 ounce yellow cake mix reduced fat
- 1 env whipped topping Dream Whip whipped topping mix
- 1/2 tsp baking pwdr
- 1 c. water cool
- 4 whl egg whites
- 1 Tbsp. extra virgin olive oil
- 1 tsp vanilla extract
- 3 ounce vanilla pudding mix not instant
- 1 c. powdered sugar
- 4 Tbsp. cocoa pwdr
- 1/8 tsp salt
- 1 Tbsp. diet margarine softened
- 3 Tbsp. warm water
Method
- Preheat oven to 350.
- Prepare two 8" cake pans with cooking spray and flour;set aside.
- In a mixing bowl, combine cake mix, whipped topping mix, and baking pwdr.
- In another mixing bowl, combine water, egg whites, oil, and vanilla extract.
- Mix dry ingredients with wet ingredients just till moistened.
- Pour proportionately into prepared pans.
- Bake for 25 min or possibly till golden.
- Freeze one layer for future use.
- Prepare pudding mix according to package directions.
- Cold.
- Split cooled cake layer.
- Spread bottom with pudding mix.
- Place top of cake layer over the pudding layer.
- Toprepare icing, combine powdered sugar, cocoa pwdr, salt, margarine, and water till smooth.
- Frost top with icing, and let additional run down sidesof cake.
- NOTES : You wouldn't believe how good and rich this pie is!
- Plus, it's much easier to make than the traditional version.
- Chill 4 hrs before serving to make slicing easier.
