Ingredients
- 1 bunch broccoli, chopped
- 4 eggs
- 1 clove garlic, minced
- 3 Tbsp. Parmesan cheese
- salt and pepper to taste
- 2 Tbsp. olive oil
Method
- Cook broccoli in water until tender-crisp.
- Beat eggs with garlic, cheese and seasonings in bowl.
- Stir in drained broccoli. Heat olive oil in skillet.
- Add egg mixture.
- Cook over low heat for 5 minutes or until lightly browned.
- Turn with spatula.
- Cook until light brown.
- Serve immediately.
- Makes 4 servings.
