Ingredients

  • 2 (1 lb.) cans tart red cherries
  • 3/4 c. sugar
  • 3 1/2 Tbsp. cornstarch
  • 1/4 tsp. salt
  • 1/2 Tbsp. grated lemon peel (optional)
  • 2 Tbsp. lemon juice
  • few drops red food coloring
  • 1 (9-inch) unbaked pie shell
  • 1/2 c. all-purpose flour
  • 1/2 c. sugar
  • 1/2 tsp. cinnamon
  • 1/4 tsp. mace
  • 1/3 c. butter

Method

  • Drain cherries.
  • Reserve 1 1/4 cups liquid. Combine 3/4 cup sugar, cornstarch and salt. Add reserved liquid.
  • Cook until thick, stirring constantly.
  • Add cherries, lemon peel, lemon juice and food coloring.
  • Pour into pastry shell. Combine flour, 1/2 cup sugar and spices.
  • Cut in butter until crumbly. Sprinkle over cherries.
  • Bake in a 400° oven about 30 minutes or until crust is brown. Serve warm.
