Ingredients

  • 1 stick margarine
  • 1 c. uncooked rice
  • 1 can soup (cheesy broccoli, cream of chicken, cream of mushroom, French onion)
  • 1 to 2 c. favorite vegetable (frozen broccoli, peas, mixed veggies, mushrooms)
  • 4 chicken breasts

Method

  • Melt margarine in a 9 x 13 casserole dish.
  • Add uncooked rice.
  • Stir in soup and water.
  • Mix in vegetables.
  • Place pieces of chicken on top of rice mixture and bake at 350° for about an hour or until chicken is done and rice is not soupy.
  • Serves 2 to 4.
