Ingredients

  • 2 c. Aborio (white long grain rice)
  • 2 T. olive oil
  • 1 medium onion- chopped
  • 2 garlic
  • 1 c. chicken breast-chopped
  • 1 c. sausage-chopped
  • 6 c. boiling chicken broth
  • 1 t. Salt
  • 1 t. Pepper
  • 1 t. Basil
  • 1 t. Oregano
  • 1 t. Crushed red pepper
  • Parmesan cheese

Method

  • In a large pot on medium heat olive oil, salt, pepper, crushed red pepper, crushed garlic for 2 minutes (do not burn garlic). Put in onions, stir, and cook until clear. Toss in meats; stir constantly until partially cooked thru. In a separate pot (or tea kettle works great) bring chicken broth to boil. Pour rice into pot, stir. Add enough broth to cover ingredients, increase heat to bubbling stirring constantly. Can also be made with any meat or vegetable. Use as a meal or side dish.
