Ingredients

  • 1 (6 oz.) box Uncle Ben's long grain and wild rice
  • 1/3 c. minced onion
  • 1/4 c. oleo
  • 1/3 c. flour
  • salt and pepper to taste
  • 1 c. milk
  • 1 c. chicken broth
  • 2 c. cooked, cubed chicken
  • corn flake crumbs

Method

  • Cook rice as directed.
  • Set aside. Saute minced onion in oleo. Blend in flour and salt and pepper to taste.
  • Stir in milk and chicken broth.
  • Stir until thickened.
  • Mix white sauce and cooked chicken into the rice. Turn into a 2-quart buttered casserole dish.
  • Sprinkle cracker or corn flake crumbs over top of crisp topping before baking.
  • Bake at 425° for 30 minutes.
