Ingredients
- 1 (6 oz.) box Uncle Ben's long grain and wild rice
- 1/3 c. minced onion
- 1/4 c. oleo
- 1/3 c. flour
- salt and pepper to taste
- 1 c. milk
- 1 c. chicken broth
- 2 c. cooked, cubed chicken
- corn flake crumbs
Method
- Cook rice as directed.
- Set aside. Saute minced onion in oleo. Blend in flour and salt and pepper to taste.
- Stir in milk and chicken broth.
- Stir until thickened.
- Mix white sauce and cooked chicken into the rice. Turn into a 2-quart buttered casserole dish.
- Sprinkle cracker or corn flake crumbs over top of crisp topping before baking.
- Bake at 425° for 30 minutes.
