Ingredients

  • 1 1/2 lb. chicken breasts, cut into bite-size pieces
  • 1 stalk celery, sliced on diagonal
  • 1 green pepper, cut into bite size pieces
  • 1 carrot, cut into thin matchsticks
  • 1 handful raw or unsalted cashews
  • 2 cloves garlic, minced
  • 1 small piece ginger root, minced
  • 2 Tbsp. soy sauce
  • 2 Tbsp. sherry
  • 1 tsp. cornstarch

Method

  • Heat wok.
  • Add oil, heat and add ginger and garlic.
  • Stir-fry for 1 minute, then add chicken and stir for another two minutes until chicken begins to turn white.
  • Add celery and stir for another minute.
