Ingredients
- 1 1/2 lb. chicken breasts, cut into bite-size pieces
- 1 stalk celery, sliced on diagonal
- 1 green pepper, cut into bite size pieces
- 1 carrot, cut into thin matchsticks
- 1 handful raw or unsalted cashews
- 2 cloves garlic, minced
- 1 small piece ginger root, minced
- 2 Tbsp. soy sauce
- 2 Tbsp. sherry
- 1 tsp. cornstarch
Method
- Heat wok.
- Add oil, heat and add ginger and garlic.
- Stir-fry for 1 minute, then add chicken and stir for another two minutes until chicken begins to turn white.
- Add celery and stir for another minute.
