Ingredients
- 1 small or medium coconut, removed from shell and grated
- 1 c. raisins
- 1/4 lb. (1 stick) butter or margarine
- 1 c. sugar
- 2 c. flour (all-purpose)
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 2 eggs, slightly beaten
- 1 c. milk
- 1 tsp. vanilla extract*
- 1/2 tsp. nutmeg
Method
- Cream butter and sugar.
- Add coconut, raisins, vanilla and nutmeg.
- Add slightly beaten eggs.
- Combine flour, baking powder and salt.
- Add to coconut/raisins mixture alternately with milk. Pour into well-greased and floured loaf pan.
- Bake at 350° for approximately 1 1/2 hours or until center tests dry.
- Let cool for a few minutes before removing from pan.
- Delicious served with any hot beverage.
