Ingredients

  • 1 small or medium coconut, removed from shell and grated
  • 1 c. raisins
  • 1/4 lb. (1 stick) butter or margarine
  • 1 c. sugar
  • 2 c. flour (all-purpose)
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 2 eggs, slightly beaten
  • 1 c. milk
  • 1 tsp. vanilla extract*
  • 1/2 tsp. nutmeg

Method

  • Cream butter and sugar.
  • Add coconut, raisins, vanilla and nutmeg.
  • Add slightly beaten eggs.
  • Combine flour, baking powder and salt.
  • Add to coconut/raisins mixture alternately with milk. Pour into well-greased and floured loaf pan.
  • Bake at 350° for approximately 1 1/2 hours or until center tests dry.
  • Let cool for a few minutes before removing from pan.
  • Delicious served with any hot beverage.
