Ingredients

  • 3 to 4 lb. beef (boneless chuck or bottom round)
  • juice of 1 lemon
  • salt and pepper
  • 1 large onion, cut up
  • 1 clove garlic, cut into pieces
  • 2 c. black coffee
  • 1/2 tsp. sugar
  • 2 Tbsp. vinegar
  • dash of Tabasco sauce
  • bacon fat

Method

  • Place meat in bowl with lemon juice, salt, pepper, onion and garlic pieces (some of which have been inserted into meat). Marinate overnight.
  • Brown meat well in bacon fat.
  • Transfer to heavy skillet.
  • Pour coffee over meat in pan where meat was browned.
  • Add rest of seasonings and simmer until tender.
  • Thicken gravy with cornstarch.
