Ingredients
- 3 to 4 lb. beef (boneless chuck or bottom round)
- juice of 1 lemon
- salt and pepper
- 1 large onion, cut up
- 1 clove garlic, cut into pieces
- 2 c. black coffee
- 1/2 tsp. sugar
- 2 Tbsp. vinegar
- dash of Tabasco sauce
- bacon fat
Method
- Place meat in bowl with lemon juice, salt, pepper, onion and garlic pieces (some of which have been inserted into meat). Marinate overnight.
- Brown meat well in bacon fat.
- Transfer to heavy skillet.
- Pour coffee over meat in pan where meat was browned.
- Add rest of seasonings and simmer until tender.
- Thicken gravy with cornstarch.
