- 1 pkg. Ramen noodles
- 4 Tbsp. butter
- 1 c. cashews, chopped
- 1 bunch broccoli
- 1 head of romaine lettuce
- 4 green onions, chopped
- 1/2 c. vegetable oil
- 1/2 c. sugar
- 1/2 red wine vinegar
- 1 Tbsp. soy sauce
- salt and pepper to taste
Method
- Crush noodles and brown lightly in butter and cashews.
- Chop broccoli well and lightly stem; cool completely.
- Drain cashews and noodles on paper towels.
- Combine vegetable oil, sugar, vinegar, soy sauce, salt and pepper.
- Blend well, pour over salad mixture. Toss.
- Serve immediately.
