Ingredients

  • 1 pkg. Ramen noodles
  • 4 Tbsp. butter
  • 1 c. cashews, chopped
  • 1 bunch broccoli
  • 1 head of romaine lettuce
  • 4 green onions, chopped
  • 1/2 c. vegetable oil
  • 1/2 c. sugar
  • 1/2 red wine vinegar
  • 1 Tbsp. soy sauce
  • salt and pepper to taste

Method

  • Crush noodles and brown lightly in butter and cashews.
  • Chop broccoli well and lightly stem; cool completely.
  • Drain cashews and noodles on paper towels.
  • Combine vegetable oil, sugar, vinegar, soy sauce, salt and pepper.
  • Blend well, pour over salad mixture. Toss.
  • Serve immediately.
