Ingredients
- 1 large eggplant
- 1 lb. ground beef
- 1/2 c. celery
- 1/2 c. bell pepper
- 5 tsp. parsley
- 2 cloves garlic, chopped
- 1 large onion
- 1/2 c. green onion
- 1/2 c. hot water
- 3 c. cooked rice
- salt and pepper
Method
- Peel and quarter eggplant.
- Boil in salted water until tender. Drain and mash.
- Brown meat.
- Add onion, celery and green pepper. Cook for 10 minutes.
- Add eggplant and remaining ingredients, except rice and water.
- Simmer for 20 to 30 minutes.
- Add cooked rice and water, if needed.
- Cover and cook for 10 to 15 minutes.
