Ingredients

  • 1 large eggplant
  • 1 lb. ground beef
  • 1/2 c. celery
  • 1/2 c. bell pepper
  • 5 tsp. parsley
  • 2 cloves garlic, chopped
  • 1 large onion
  • 1/2 c. green onion
  • 1/2 c. hot water
  • 3 c. cooked rice
  • salt and pepper

Method

  • Peel and quarter eggplant.
  • Boil in salted water until tender. Drain and mash.
  • Brown meat.
  • Add onion, celery and green pepper. Cook for 10 minutes.
  • Add eggplant and remaining ingredients, except rice and water.
  • Simmer for 20 to 30 minutes.
  • Add cooked rice and water, if needed.
  • Cover and cook for 10 to 15 minutes.
