Ingredients
- 185 g butter
- 1 cup brown sugar
- 1 cup caster sugar
- 2 eggs, beaten
- ½ teaspoon bicarbonate of soda
- ½ cup sour cream
- 3½ cups plain flour
- ¼ cup cornflour
- 1 teaspoon imitation vanilla essence
- 1 cup chopped raisins
- ½ cup chopped mixed peel
- 1 cup glacé cherries
- 1 cup blanched almonds, chopped
Method
1. Beat butter and sugars in a bowl with an electric mixer until creamy. Add eggs and beat well. Stir soda into cream, let dissolve and stir into creamed mixture; mix well.
2. Sift together flours. Stir half into creamed mixture. Add vanilla essence, raisins, peel, cherries and nuts; mix thoroughly. Fold in remaining flour and mix well.
3. Drop teaspoonfuls of onto greased baking trays, allow room for spreading. Bake at 180°C for about 12 minutes, or until golden. Cool on trays for 2–3 minutes. Transfer to a wire rack to cool completely. Store in an airtight container.
