Ingredients

  • 4 tablespoons butter
  • green onions
  • 1 pound fresh peas or frozen
  • 3 cups stock
  • 3 mint springs
  • 3 cups milk
  • salt
  • pepper
  • light cream to serve

Method

  • Heat the butter in a large heavy pan. Add the chopped green onions and cook on a low heat until they are softened.
  • Stir the peas into the pan, add the stock and mint, and bring to a boil. Lower the heat and simmer until the peas are tender.Season to taste.
  • Pour the soup into a food processor or blender, add the milk and puree until smooth.
  • Leave to cool and serve warm or chill lightly, as you wish. Garnish with a little light cream.
