Ingredients
- 4 tablespoons butter
- green onions
- 1 pound fresh peas or frozen
- 3 cups stock
- 3 mint springs
- 3 cups milk
- salt
- pepper
- light cream to serve
Method
- Heat the butter in a large heavy pan. Add the chopped green onions and cook on a low heat until they are softened.
- Stir the peas into the pan, add the stock and mint, and bring to a boil. Lower the heat and simmer until the peas are tender.Season to taste.
- Pour the soup into a food processor or blender, add the milk and puree until smooth.
- Leave to cool and serve warm or chill lightly, as you wish. Garnish with a little light cream.
