Ingredients

  • 3 lb. cream cheese
  • 11 oz. sugar
  • 10 oz. half and half
  • 5 large eggs
  • 1 tsp. vanilla
  • 1/4 tsp. salt
  • 1/4 c. butter
  • 1 c. graham cracker crumbs
  • 1 c. sugar
  • 1 1/4 lb. cream cheese
  • 3 Tbsp. flour
  • 1/2 tsp. salt
  • 1 pt. dairy sour cream
  • 1 tsp. vanilla
  • 6 egg yolks
  • 6 egg whites
  • 3 Tbsp. sugar
  • 1 tsp. cream of tartar

Method

  • Add cream of tartar to egg whites and beat until foamy. Gradually add sugar and beat until stiff.
  • Fold egg white mixture into base thoroughly and pour mixture into prepared pan.
  • Sprinkle with remaining crumbs and bake at 325° for 1 hour and 45 minutes or until firm.
  • Turn off oven; open door and leave in oven for 10 minutes.
  • Remove from oven and let cool on rack away from draft.
