- 1 bunch broccoli
- 4 carrots, cut up
- 1/2 c. corn
- 1/2 c. celery
- 1 yellow squash
- salt
- 1 yellow onion
- 1 bunch cauliflower
- 1/2 c. green beans
- 1/2 c. peas
- 1 zucchini
- bay leaves
- pepper
- chicken or beef broth
Method
- Cut up broccoli, cauliflower, carrots, zucchini and yellow squash.
- Place all vegetables in large stock pot.
- Fill pot with water, covering vegetables completely and seasonings and broth for desired taste.
- Let simmer for at least 3 hours over low heat. Freezes well.
