Ingredients

  • 4 to 5 medium Irish potatoes
  • 1 medium onion, chopped
  • salt and pepper
  • 1 c. sharp Cheddar cheese, grated
  • 1/2 pt. whipped cream

Method

  • Boil unpeeled potatoes in unsalted water until tender.
  • Allow to cool, then peel.
  • Grate on coarse side of a grater.
  • In a greased 2-quart baking dish, make a layer of half the potatoes and half the onions, then salt and pepper.
  • Repeat with potatoes and onions.
  • Salt and pepper again heavily.
  • Sprinkle cheese over top and pour cream over all.
  • Cover with aluminum foil and bake at 350° for 45 minutes.
