Ingredients
- 4 to 5 medium Irish potatoes
- 1 medium onion, chopped
- salt and pepper
- 1 c. sharp Cheddar cheese, grated
- 1/2 pt. whipped cream
Method
- Boil unpeeled potatoes in unsalted water until tender.
- Allow to cool, then peel.
- Grate on coarse side of a grater.
- In a greased 2-quart baking dish, make a layer of half the potatoes and half the onions, then salt and pepper.
- Repeat with potatoes and onions.
- Salt and pepper again heavily.
- Sprinkle cheese over top and pour cream over all.
- Cover with aluminum foil and bake at 350° for 45 minutes.
